Turnip Soup [O]
12 good size’d Turnips, 6 white Onions
2 heads of celery all slice'd thin-
a small piece of lean Bacon- a
few white peppercorns, the crumb of
a french roll, put these into 3
Quarts of water boil it gently till
quite soft, skim it & bruise the
turnips then put it into a
cheese cloth & rub it through with
a spoon- have ready boile'd 18
round cut Turnips, add 1 pint of Cream
the top of a french roll & a little
salt- let it boil up once
before it is sent in
