the Lemons very thin and steep the rinds in part of the Wine
all Night Sugar to your taste Eight Whites of Eggs and
the Shells beaten boil it well when you take it off the Fire
let it Stand a few Minnets to Settle before you pour it
through your bagg.

If I have any Lemon Wine by me I often put a little in but it will do very well without any.

If I have any Lemon Wine by me I often put a little in but it will do very well without any.
It is possible that "Mountain Wine" is referring to a brand of spring water rather than the contemporary term for wine made from grapes grown in mountainous areas.
